- 1 cup packed medjool dates, pitted
- 2 tablespoons creamy almond butter, or any nut/seed butter
- 1 tablespoon coconut oil, melted
- 1 cup chocolate chips, or an 8-ounce chocolate bar
- 2 teaspoons coconut oil, for melting chocolate
Instructions
- Soak the pitted dates in very hot water for about 10 minutes.
- Drain and blend the soaked dates with almond butter and melted coconut oil until smooth.
- Line a 9×5-inch loaf pan with parchment paper and pour the mixture into it. Freeze for 2-3 hours until firm.
- Slice the frozen caramel into squares.
- In a heat-safe bowl, melt chocolate chips with coconut oil using a microwave or double boiler.
- Dip each square into the melted chocolate until fully coated and place on a parchment-lined plate.
- Chill in the fridge for about an hour until set.
