- 3 cups powdered sugar
- ½ cup reduced apple cider
- 1 tsp vanilla extract
- Pinch of salt
- ½ cup store-bought caramel sauce
- Pinch of flaky sea salt (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a mixing bowl, whisk together flour, baking soda, baking powder, salt, ground cinnamon, ground nutmeg, and ground cloves. Set aside.
- In another bowl, cream together softened unsalted butter and light brown sugar until light and fluffy.
- Add in the large egg and vanilla extract, mixing until fully combined.
- Gradually incorporate the reduced apple cider into the butter mixture, then slowly mix in the dry ingredients until just combined.
- Using a cookie scoop or tablespoon, drop spoonfuls of dough onto prepared baking sheets, leaving space between each scoop.
- Bake for about 10 minutes or until lightly golden. Allow cooling on sheets for a few minutes before transferring to a cooling rack.
- While cookies cool, prepare the filling by beating together whole milk, softened butter, powdered sugar, reduced apple cider, vanilla extract, and a pinch of salt until smooth.
- Once cooled, spread caramel sauce on one cookie half and top with another cookie half to create sandwiches. Optionally sprinkle flaky sea salt on top.
