  • ½ cup whole milk
  • ½ cup unsalted butter, softened (for filling)
  • 3 cups powdered sugar
  • ¼ cup reduced apple cider (for filling)
  • 1 tsp vanilla extract (for filling)
  • Pinch of salt (for filling)
  • ½ cup store-bought caramel sauce
  • Pinch of flaky sea salt (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk flour, baking soda, salt, and spices together.
  3. In another bowl, cream softened butter and brown sugar until fluffy; add egg and vanilla.
  4. Mix dry ingredients alternately with reduced apple cider and whole milk until just combined.
  5. Drop tablespoons of dough onto prepared sheets and bake for about 10 minutes until edges are golden.
  6. For the filling, beat softened butter until smooth, then gradually add powdered sugar and reduced apple cider until creamy.
  7. Assemble whoopie pies by spreading caramel filling between two cookies.
