  • 12 thick-cut slices of brioche bread (or 12 brioche rolls), dried out overnight
  • 1 3/4 lb apples (about 5 apples), peeled and diced
  • 4 tbsp salted butter
  • 3/4 cup brown sugar
  • 1 cup milk (of choice)
  • 1 cup heavy cream
  • 4 eggs

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your baking pan.
  2. In a medium saucepan, melt butter over medium heat, then add flour and apple pie spice, stirring until combined.
  3. Add brown sugar, diced apples, and water. Cover and cook until apples soften (10–15 minutes). Strain juices into a bowl.
  4. In another saucepan over medium-low heat, whisk together milk, cream, remaining butter, sugars, salt, vanilla extract, cinnamon, and optional apple pie spice until melted and combined.
  5. Remove from heat; whisk in eggs one at a time.
  6. Cut dried-out bread into cubes. Layer one-third of the cubes in the prepared pan, followed by one-third of the apple filling. Repeat layers two more times.
  7. Pour custard mixture over layered bread cubes ensuring everything is soaked.
  8. Bake for 35–40 minutes until golden but slightly wobbly when shaken.
