- 2 pounds beef chuck, cut into 1-inch cubes
- 3 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 cups carrots, sliced
- 2 cups potatoes, diced
- 1 cup parsnips, diced
- 1 cup celery, diced
- 4 cups beef broth
- 1 tablespoon tomato paste
- 2 teaspoons dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium-high heat. Add beef cubes in batches and sear until browned on all sides. Remove and set aside.
- In the same pot, sauté the onion and garlic for about 3–4 minutes until translucent.
- Stir in tomato paste and cook for an additional minute. Deglaze with a splash of beef broth.
- Return the seared beef to the pot along with remaining broth, carrots, potatoes, parsnips, celery, thyme, rosemary, salt, and pepper.
- Bring to a boil then reduce heat to low. Cover and let simmer for about 2 hours or until beef is tender.
- Adjust seasoning as necessary before serving hot, garnished with fresh parsley.
