  • 1 pound (450g) cremini or button mushrooms, cleaned and halved
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional, for heat)
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Clean the mushrooms using a damp cloth and cut them in half if large.
  3. In a mixing bowl, whisk together the balsamic vinegar, olive oil, garlic, thyme, salt, black pepper, and optional red pepper flakes.
  4. Add the mushrooms to the bowl and toss them until well coated. Let them marinate for about 5 minutes.
  5. Spread the mushrooms in a single layer on the prepared baking sheet.
  6. Roast in the oven for 20–25 minutes, stirring halfway through until tender and brown.
  7. Garnish with fresh parsley before serving.
