- 1 cup mayonnaise
- ½ cup Thai sweet chili sauce
- 2 tablespoons honey
- 1 cup buttermilk
- ¾ cup all-purpose flour
- ½ cup cornstarch
- 2 cups panko breadcrumbs
- Canola oil (for frying)
- Sriracha (to taste)
Instructions
- In a bowl, whisk together mayonnaise, Thai sweet chili sauce, Sriracha, and honey. Set aside half for serving.
- Marinate chicken tenderloins in buttermilk for at least 10 minutes.
- Prepare the breading station: mix flour, cornstarch, garlic powder, salt, black pepper, and cayenne in one bowl; beat egg with Sriracha in another; place panko in a third bowl.
- Dredge each tenderloin in the flour mixture, dip in the egg mixture, and coat with panko breadcrumbs.
- Heat canola oil in a deep fryer or pot to 350°F (175°C). Fry chicken in batches until golden brown (about 6 minutes per batch).
- Drain on paper towels and drizzle with reserved sauce before serving warm.
