  • 1 ½ pounds boneless skinless chicken tenderloins
  • 1 cup mayonnaise
  • ½ cup Thai sweet chili sauce
  • 2 tablespoons honey
  • 1 cup buttermilk
  • ¾ cup all-purpose flour
  • ½ cup cornstarch
  • 2 cups panko breadcrumbs
  • Canola oil (for frying)
  • Sriracha (to taste)

Instructions

  1. In a bowl, whisk together mayonnaise, Thai sweet chili sauce, Sriracha, and honey. Set aside half for serving.
  2. Marinate chicken tenderloins in buttermilk for at least 10 minutes.
  3. Prepare the breading station: mix flour, cornstarch, garlic powder, salt, black pepper, and cayenne in one bowl; beat egg with Sriracha in another; place panko in a third bowl.
  4. Dredge each tenderloin in the flour mixture, dip in the egg mixture, and coat with panko breadcrumbs.
  5. Heat canola oil in a deep fryer or pot to 350°F (175°C). Fry chicken in batches until golden brown (about 6 minutes per batch).
  6. Drain on paper towels and drizzle with reserved sauce before serving warm.
