  • 2 medium sweet potatoes
  • 1 large yellow onion
  • 1 medium head broccoli
  • 1 pound boneless skinless chicken breasts
  • 1/2 cup BBQ sauce
  • 1 Tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chipotle powder or chili powder
  • 1/4 teaspoon salt (divided)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and chop sweet potatoes and onion; place on a lined sheet pan. Drizzle with olive oil and season with salt, garlic powder, and chipotle powder. Bake for 20 minutes.
  3. Add broccoli to the pan; drizzle with olive oil and salt. Place chicken breasts on the pan and brush with BBQ sauce. Bake for another 15-20 minutes until the chicken is cooked through.
  4. Shred the chicken using forks and mix with remaining BBQ sauce.
  5. Serve by dividing the chicken and vegetables into bowls.
