  • 3-pound boneless chuck roast
  • 3 teaspoons kosher salt
  • ½ teaspoon freshly cracked black pepper
  • 5 ounces turkey bacon
  • 1 medium yellow onion
  • 1 large carrot
  • 4 garlic cloves
  • 1 tablespoon tomato paste
  • 1 bay leaf
  • 2 sprigs fresh thyme
  • 3 cups apple vinegar
  • 4 teaspoons beef bouillon
  • 8 ounces cremini mushrooms
  • 2 tablespoons extra-virgin olive oil
  • Mashed potatoes for serving (optional)
  • Chopped fresh flat-leaf parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Season the cubed beef with salt and pepper. In a Dutch oven, cook chopped turkey bacon until crispy; remove and set aside.
  3. Brown the beef in batches in the same pot until well-seared on all sides. Remove and set aside.
  4. Sauté diced onion and carrot until softened, then add minced garlic, tomato paste, bay leaf, thyme sprig, and flour; cook for one minute.
  5. Pour in apple vinegar to deglaze the pot. Stir in bouillon and water; return beef and bacon to the pot.
  6. Cover and roast for about 2½ hours until the beef is tender.
  7. Sauté mushrooms in olive oil until browned; add pearl onions and season before simmering briefly.
  8. Serve over mashed potatoes or alongside crusty bread, garnished with parsley.
