Ingredients

  • 2 pounds Yukon Gold potatoes
  • 4 yellow onions
  • 2 tablespoons olive oil
  • 4 tablespoons salted butter (or non-dairy butter)
  • 3/4 cup half & half or full-fat coconut milk
  • 1 teaspoon kosher salt
  • 1 cup Parmesan cheese (freshly grated)
  • Fresh chives, thyme, and sage for garnish

Instructions

  1. Peel and thinly slice the onions.
  2. In a skillet over medium heat, add olive oil and sauté the onions for 40-50 minutes until caramelized.
  3. While the onions cook, wash and chop the Yukon Gold potatoes. Boil them in salted water for about 20 minutes or until fork-tender.
  4. Drain the cooked potatoes and mash them until smooth. Mix in butter, kosher salt, and half & half (or coconut milk).
  5. Fold in half of the caramelized onions and grated Parmesan cheese.
  6. Serve in a bowl topped with remaining caramelized onions and fresh herbs.
