- 2 pounds Yukon Gold potatoes
- 4 yellow onions
- 2 tablespoons olive oil
- 4 tablespoons salted butter (or non-dairy butter)
- 3/4 cup half & half or full-fat coconut milk
- 1 teaspoon kosher salt
- 1 cup Parmesan cheese (freshly grated)
- Fresh chives, thyme, and sage for garnish
Instructions
- Peel and thinly slice the onions.
- In a skillet over medium heat, add olive oil and sauté the onions for 40-50 minutes until caramelized.
- While the onions cook, wash and chop the Yukon Gold potatoes. Boil them in salted water for about 20 minutes or until fork-tender.
- Drain the cooked potatoes and mash them until smooth. Mix in butter, kosher salt, and half & half (or coconut milk).
- Fold in half of the caramelized onions and grated Parmesan cheese.
- Serve in a bowl topped with remaining caramelized onions and fresh herbs.
