  • 1 tablespoon extra-virgin olive oil
  • 2 tablespoons butter
  • 1 large onion (finely chopped)
  • 2 large carrots (finely chopped)
  • 2 celery stalks (finely chopped)
  • 3 cloves garlic (chopped)
  • 4 ounces turkey strips (diced)
  • 1 pound ground beef (20% fat)
  • 1 cup dry white grape juice
  • 1 (28 ounces) can peeled San Marzano tomatoes (hand crushed)
  • 1 cup whole milk
  • Salt and freshly ground pepper to taste

Instructions

  1. Heat olive oil and butter in a large Dutch oven over medium-high heat. Sauté onion, carrots, celery for about 5 to 8 minutes until softened.
  2. Add garlic and cook for an additional couple of minutes. Season with salt and pepper; remove from pot.
  3. In the same pot, add turkey strips; cook until golden brown. Set aside. Cook ground beef in batches until browned; season with salt and pepper.
  4. Return soffritto and turkey to the pot. Deglaze with grape juice, scraping the bottom; let evaporate.
  5. Stir in crushed tomatoes, milk, nutmeg; season to taste. Bring to a boil, then reduce heat to simmer for 3–4 hours.
  6. Stir in heavy cream and parmesan cheese just before serving.
