- ½ pound lean ground beef
- ½ cup diced yellow onion
- 8 ounces shredded Colby jack cheese
- 12 ounces tortilla chips (about ⅔ of the bag)
- 2 tablespoons taco seasoning
- ¼ cup water
- Optional garnish: Sour cream, diced tomatoes, chopped fresh cilantro
Instructions
- Preheat your oven to 450°F (232°C) and spray a bundt pan with cooking spray.
- In a large skillet over medium-high heat, cook the ground beef and diced onion until no pink remains (about 6–7 minutes). Drain excess fat.
- Stir in taco seasoning and water; cook until liquid evaporates (2–3 minutes).
- Layer half the cheese in the bundt pan, followed by half the beef mixture and about ⅓ of the tortilla chips.
- Add remaining cheese, then top with the rest of the beef mixture and another layer of tortilla chips.
- Bake for about 10 minutes until cheese is melted.
- Invert onto a heatproof plate and garnish with desired toppings before serving.
