  • 1/2 tsp dried thyme
  • 1 lb pasta
  • 1/3 cup reserved pasta water

Instructions

  1. Preheat the oven to 450°F and line a baking sheet with parchment paper.
  2. Spread the frozen butternut squash, chopped tomatoes, and sliced onion on the baking sheet. Drizzle with olive oil and seasonings; toss to coat.
  3. Bake for 20 minutes until vegetables are tender and caramelized.
  4. Cook pasta according to package instructions in boiling water.
  5. Reserve 1/3 cup of pasta water before draining.
  6. Blend the roasted vegetables with reserved pasta water until smooth.
  7. Toss the creamy sauce with cooked pasta until well-coated.
