Description

Ingredients

  • 1 head of garlic
  • 30 grams olive oil
  • Sprinkle of salt
  • 50 grams butter
  • 1 tablespoon fresh parsley
  • 90 grams warm milk
  • 7 grams active dry yeast
  • 25 grams honey
  • 200 grams all-purpose flour
  • 50 grams bread flour
  • 20 grams milk powder (optional)
  • 25 grams butter
  • 2 egg yolks
  • 1 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 200 grams mozzarella cheese
  • 1 egg for wash

Instructions

  1. Roast the garlic by drizzling it with olive oil and salt in a ramekin, covering it with foil, and baking at 160°C (320°F) for 2 hours.
  2. Prepare garlic butter by mixing softened butter with roasted garlic, chopped parsley, and some infused oil.
  3. Combine warm milk, active dry yeast, and honey; let it proof until frothy.
  4. In a mixing bowl, mix all-purpose flour, bread flour, sugar, milk powder (if using), softened butter, salt, egg yolks, and the yeast mixture.
  5. Knead the dough using a dough hook for 15–20 minutes until smooth.
  6. Allow the dough to rise in a warm place until doubled in size (about 1.5 hours).
  7. Roll out the dough, spread garlic butter over it, sprinkle mozzarella cheese on top, then roll into a log shape.
  8. Cut into portions and allow to proof again for 30 minutes.
  9. Bake at 175°C (350°F) for 20–25 minutes until golden brown.
