  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter (melted)
  • 16 oz cream cheese (softened)
  • 3 medium Granny Smith apples (peeled and diced)
  • 1 cup granulated sugar (divided)
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp lemon juice
  • 1/2 cup all-purpose flour
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup heavy cream
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, granulated sugar, and cinnamon. Press firmly into the bottom of the prepared pan.
  3. In another bowl, beat cream cheese and remaining granulated sugar until smooth. Add eggs one at a time and stir in vanilla.
  4. Toss diced apples with lemon juice, brown sugar, cinnamon, and nutmeg; gently fold into the cheesecake mixture.
  5. Pour apple cheesecake filling over the crust and spread evenly.
  6. Prepare crumble topping by mixing flour and brown sugar; cut in cold butter until crumbly. Sprinkle over the filling.
  7. Bake for about 45 minutes or until set.
  8. For caramel sauce, heat granulated sugar and water until dissolved; boil without stirring until amber color appears. Remove from heat and whisk in heavy cream, butter, and salt until smooth.
  9. Let bars cool completely before cutting; drizzle with caramel sauce before serving.
