- 3 medium Granny Smith apples (peeled and diced)
- 1 cup granulated sugar (divided)
- 1/4 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 tbsp lemon juice
- 1/2 cup all-purpose flour
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 cup heavy cream
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
- In a mixing bowl, combine graham cracker crumbs, melted butter, granulated sugar, and cinnamon. Press firmly into the bottom of the prepared pan.
- In another bowl, beat cream cheese and remaining granulated sugar until smooth. Add eggs one at a time and stir in vanilla.
- Toss diced apples with lemon juice, brown sugar, cinnamon, and nutmeg; gently fold into the cheesecake mixture.
- Pour apple cheesecake filling over the crust and spread evenly.
- Prepare crumble topping by mixing flour and brown sugar; cut in cold butter until crumbly. Sprinkle over the filling.
- Bake for about 45 minutes or until set.
- For caramel sauce, heat granulated sugar and water until dissolved; boil without stirring until amber color appears. Remove from heat and whisk in heavy cream, butter, and salt until smooth.
