Description

  • 3 large yellow onions
  • 2 tablespoons olive oil
  • 1 tablespoon butter (unsalted)
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon balsamic vinegar
  • 1/2 teaspoon dried thyme (or 1 teaspoon fresh thyme leaves)
  • Salt and freshly ground black pepper
  • 8 ounces cream cheese, softened
  • 4 ounces Gruyère cheese, grated
  • 2 ounces Parmesan cheese, grated
  • 1 large egg
  • 1/4 cup heavy cream or crème fraîche
  • Pinch of nutmeg (optional)
  • 1 box (14.1 ounces) refrigerated pie crusts (or homemade pie crust)
  • Fresh thyme sprigs (for garnish)
  • Balsamic glaze (for drizzling)

Instructions

  1. Heat olive oil and butter in a non-stick skillet over medium heat. Add thinly sliced onions, sugar, salt, pepper, and thyme. Cook slowly for about 20-25 minutes until golden brown. Stir in balsamic vinegar.
  2. In a mixing bowl, combine cream cheese, Gruyère cheese, Parmesan cheese, egg, heavy cream, salt, pepper, and nutmeg if desired. Whisk until smooth.
  3. Preheat oven to 375°F (190°C). Roll out pie crusts into tart pans or on a baking sheet. Spread caramelized onion mixture evenly across the crusts and pour cheese filling on top.
  4. Bake for 25-30 minutes until golden brown on top. Let cool slightly before slicing.
  5. Garnish with fresh thyme sprigs and drizzle balsamic glaze over each tart before serving.
