- 8 ounces cream cheese, softened
- 4 ounces Gruyère cheese, grated
- 2 ounces Parmesan cheese, grated
- 1 large egg
- 1/4 cup heavy cream or crème fraîche
- Pinch of nutmeg (optional)
- 1 box (14.1 ounces) refrigerated pie crusts (or homemade pie crust)
- Fresh thyme sprigs (for garnish)
- Balsamic glaze (for drizzling)
Instructions
- Heat olive oil and butter in a non-stick skillet over medium heat. Add thinly sliced onions, sugar, salt, pepper, and thyme. Cook slowly for about 20-25 minutes until golden brown. Stir in balsamic vinegar.
- In a mixing bowl, combine cream cheese, Gruyère cheese, Parmesan cheese, egg, heavy cream, salt, pepper, and nutmeg if desired. Whisk until smooth.
- Preheat oven to 375°F (190°C). Roll out pie crusts into tart pans or on a baking sheet. Spread caramelized onion mixture evenly across the crusts and pour cheese filling on top.
