- 4 to 6 bone-in skin-on chicken thighs
- 1 teaspoon allspice
- 3 cloves garlic, minced
- 1 teaspoon fresh thyme leaves
- Salt and pepper to taste
- 2 cups long-grain rice
- 1 onion, chopped
- 1 scotch bonnet or habanero pepper, diced
- 3 cups chicken broth
- 1 lime, juiced
- 2 tablespoons vegetable oil
Instructions
- Marinate chicken thighs with allspice, salt, pepper, garlic, and thyme for at least 30 minutes or overnight.
- In a large skillet, heat vegetable oil over medium-high heat and sear the chicken skin-side down for 4-5 minutes per side until golden brown. Remove from skillet.
- Sauté onion, garlic, and diced pepper in the same skillet until softened.
- Stir in rice and coat with aromatics; pour in chicken broth and bring to a simmer. Nestle the chicken back into the skillet.
