  • 1 (20-ounce) package refrigerated cheese tortellini
  • 1 tablespoon fresh sage (chopped)
  • 8 ounces cremini mushrooms (sliced)
  • 3 tablespoons butter (divided)
  • 1 tablespoon olive oil
  • 1 clove garlic (minced)
  • 1/2 cup freshly grated parmesan cheese
  • Salt & pepper (to taste)

Instructions

  1. Boil water in a large pot. Cook tortellini according to package instructions until al dente.
  2. While cooking, slice the mushrooms and chop the sage.
  3. In a skillet over medium-high heat, melt 1 tablespoon of butter with olive oil. Add chopped sage and fry until crispy, about one minute. Remove and set aside.
  4. In the same skillet, add sliced mushrooms and minced garlic along with another tablespoon of butter. Sauté for about 5 minutes until browned.
  5. Drain the tortellini and add it to the skillet with mushrooms. Add remaining butter, parmesan cheese, and crispy sage; toss gently to combine. Season with salt and pepper as needed.
