  • 23 cups cooked and shredded chicken
  • 4 cups fresh spinach or 1 package frozen spinach (thawed and drained)
  • 8 ounces cream cheese (softened)
  • 1/2 cup sour cream
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic (minced)
  • 1 small onion (finely chopped)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of nutmeg (optional)
  • Optional additions: sliced mushrooms, artichoke hearts, or cooked pasta

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine cooked chicken, softened cream cheese, sour cream, garlic, onion, salt, black pepper, and nutmeg (if using). Mix until smooth.
  3. Fold in the spinach until evenly distributed.
  4. Stir in half of the mozzarella and all of the Parmesan cheese until well blended.
  5. Transfer the mixture into a greased baking dish and spread evenly.
  6. Top with the remaining mozzarella cheese.
  7. Bake for about 30 minutes or until golden brown on top.
