- 2 tbsp olive oil
- 8–10 mushrooms (sliced)
- 2 garlic cloves (minced)
- 1 cup cooking cream
- 1/2 tsp crushed black pepper
- 1/3 chicken stock cube
- 1/2 tsp dried basil leaves
- 150 g linguine
- 1 cup baby spinach
- 2 tbsp pine nuts
- 1/4 cup Parmesan cheese (grated plus extra for topping)
Instructions
- Cook linguine according to package instructions until al dente; do not rinse.
- In a skillet, heat olive oil over medium-high heat. Add sliced mushrooms and sauté until caramelized.
- Stir in minced garlic and cook for about 2 minutes.
- Pour in cooking cream, crushed black pepper, chicken stock cube, and dried basil leaves. Simmer for 4–5 minutes until thickened.
- Add grated Parmesan cheese and stir until melted into the sauce.
- Drain the cooked linguine and toss with the sauce in the skillet.
- Mix in baby spinach until wilted from residual heat.
- Serve garnished with toasted pine nuts and extra Parmesan cheese.
