Ingredients

  • 2 tbsp olive oil
  • 810 mushrooms (sliced)
  • 2 garlic cloves (minced)
  • 1 cup cooking cream
  • 1/2 tsp crushed black pepper
  • 1/3 chicken stock cube
  • 1/2 tsp dried basil leaves
  • 150 g linguine
  • 1 cup baby spinach
  • 2 tbsp pine nuts
  • 1/4 cup Parmesan cheese (grated plus extra for topping)

Instructions

  1. Cook linguine according to package instructions until al dente; do not rinse.
  2. In a skillet, heat olive oil over medium-high heat. Add sliced mushrooms and sauté until caramelized.
  3. Stir in minced garlic and cook for about 2 minutes.
  4. Pour in cooking cream, crushed black pepper, chicken stock cube, and dried basil leaves. Simmer for 4–5 minutes until thickened.
  5. Add grated Parmesan cheese and stir until melted into the sauce.
  6. Drain the cooked linguine and toss with the sauce in the skillet.
  7. Mix in baby spinach until wilted from residual heat.
  8. Serve garnished with toasted pine nuts and extra Parmesan cheese.
