Ingredients

Scale
  • 5 pounds Yukon gold potatoes
  • 2 tablespoons unsalted butter
  • 2 cloves garlic (minced)
  • 1 tablespoon all-purpose flour
  • 1 cup heavy cream (or whole milk)
  • ½ cup Parmesan cheese (optional)
  • 1 teaspoon fresh thyme
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a medium-sized ceramic baking dish.
  2. Thinly slice the Yukon gold potatoes using a mandolin or sharp knife.
  3. In a large pot over medium heat, melt the butter and cook the minced garlic until fragrant.
  4. Stir in the flour to create a roux, cooking for 1-2 minutes before gradually adding the heavy cream until thickened.
  5. Mix in Parmesan cheese (if using), thyme, salt, and pepper until smooth.
  6. In a large bowl, combine sliced potatoes with the creamy sauce and toss to coat evenly.
  7. Layer the potato slices upright in the baking dish and pour any remaining sauce on top; sprinkle extra Parmesan if desired.
  8. Cover with aluminum foil and bake for 30 minutes; then uncover and bake for an additional 30 minutes until golden brown.
  9. Allow to cool for about 10 minutes before serving.
