  • 2 eggs
  • 2 tablespoons water
  • ⅔ cup shredded sweetened coconut flakes
  • ⅔ cup panko bread crumbs
  • Oil for frying

Instructions

  1. In a shallow bowl, whisk together flour, chili powder, salt, and pepper.
  2. In another bowl, beat together eggs and water.
  3. Prepare bowls with shredded coconut and panko breadcrumbs.
  4. Coat each chicken tender in flour mixture, dip in egg wash, then roll in coconut and panko.
  5. Heat oil in a large skillet over medium heat.
  6. Fry tenders until golden brown on both sides (about 2-3 minutes per side).
  7. Drain on a wire rack before serving warm.
