- 4 small to medium chicken breasts
- 2 tablespoons olive oil
- 3–4 cloves garlic, minced
- 1 cup light cream
- 1 tablespoon Italian seasoning
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Optional: 1 cup chopped spinach
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- In a skillet, heat olive oil over medium-high heat. Add the chicken and cook for 5-6 minutes per side until golden brown and crispy. Remove from the skillet and set aside.
- Lower the heat, add minced garlic to the skillet, and sauté for about 30 seconds until fragrant.
- Pour in the cream while stirring continuously. Then add Italian seasoning and Parmesan cheese, mixing until smooth.
- Stir in chopped spinach (if using) and simmer for another 2-3 minutes.
- Return the cooked chicken to the skillet, spooning sauce over it, then simmer for another minute before serving.
