Ingredients

  • 3 pounds beef chuck roast
  • 3 dried guajillo chilies
  • 2 dried ancho chilies
  • 1 onion
  • 4 garlic cloves
  • 1 can diced tomatoes (14.5 ounces)
  • 2 cups beef broth
  • Corn tortillas
  • Fresh cilantro and diced onion for garnish

Instructions

  1. Soak dried chilies in hot water for about 15 minutes until soft.
  2. In a blender, combine soaked chilies, onion, garlic, and diced tomatoes; blend until smooth.
  3. Place beef in the slow cooker and pour blended chili mixture over it.
  4. Add beef broth and seasonings such as vinegar, oregano, cumin, bay leaves, salt, and pepper.
  5. Cover and cook on low for 8-10 hours until the beef is fork-tender.
  6. Shred the beef and mix it back into the sauce.
  7. Fry corn tortillas in a pan until crispy; fill with shredded beef mixture.
  8. Garnish with fresh cilantro and diced onions before serving.
