  • 5 ½ oz white chocolate
  • ¼ cup double cream
  • 3 ½ oz unsalted ground pistachios
  • 3 ½ oz kataifi pastry
  • 9 oz milk chocolate
  • ¾ cup all-purpose flour
  • ⅔ cup cornstarch

Instructions

  1. Prepare the kataifi batter by whisking together flour, cornstarch, sugar, and salt in a bowl. Add vegetable oil and water; mix until smooth and let rest for 30 minutes.
  2. Heat a non-stick pan over medium-low heat and pipe thin strands of batter onto the surface. Cook for about 30–45 seconds until set but not browned. Remove and allow to cool.
  3. For the filling, melt white chocolate with double cream in short intervals until smooth. Blend ground pistachios with salt and combine with the chocolate mixture.
  4. Toast cooked kataifi strands in melted butter until golden and crispy, then mix into the pistachio filling and refrigerate until firm.
  5. Roll chilled mixture into balls, dip in melted milk chocolate, and garnish with chopped pistachios before chilling again.
