 - 1/2 cup chopped Yellow Onion
 - 1 Poblano Pepper (chopped, stems and seeds removed)
 - 2 cups Shredded Chicken
 - 1 can Black Beans (15 oz.; drained – not rinsed)
 - 1/2 cup frozen Corn
 - 3 cups Chicken Broth
 - 1/2 cup Heavy Cream
 - 1/2 cup Shredded Cheese (Cheddar or Mexican Blend)
 - 2 tsp. fresh Lime Juice
 - finely chopped Cilantro (for garnish)
 - 1/2 tsp. Garlic Powder
 - 1/2 tsp. Onion Powder
 - 1/2 tsp. Chili Powder
 - 1/2 tsp. Dried Oregano
 - 1/2 tsp. Kosher Salt
 - 1/2 tsp. freshly cracked Black Pepper
 - 1/4 tsp. Cumin
 
Instructions
- In a large saucepan, melt butter over medium heat. Add chopped onion and poblano pepper; cook until tender.
 - Stir in shredded chicken, drained black beans, corn, broth, and seasoning blend. Bring to a simmer and cook uncovered for 15 minutes.
 - Add heavy cream and cheese, letting them melt into the soup. Simmer for another 15 minutes.
 - Stir in fresh lime juice and season to taste before serving hot.
