  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 1 pound spaghetti
  • 4 tablespoons butter
  • 4 cloves garlic
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • 1 cup chicken broth
  • 8 ounces cream cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Cook spaghetti in salted water until al dente. Drain and set aside.
  2. Season chicken with Cajun seasoning.
  3. In a large skillet, heat olive oil over medium-high heat and brown the chicken for about 6–8 minutes. Remove from skillet.
  4. In the same skillet, melt butter and sauté minced garlic for 1 minute.
  5. Whisk in flour to create a roux; cook for 1–2 minutes.
  6. Gradually add milk and chicken broth; stir until smooth and simmer gently.
  7. Add cream cheese and one cup of mozzarella, stirring until melted.
  8. Mix in Parmesan cheese, season with salt, pepper, and red pepper flakes if desired.
  9. Return cooked chicken to the sauce and simmer for an additional 2–3 minutes.
  10. Toss cooked spaghetti into the sauce until well coated.
  11. Top with remaining mozzarella cheese; cover for 2–3 minutes until melted.
