  • 4 medium bell peppers (red, yellow, or green)
  • 1 lb ground turkey or lean beef
  • 1 cup cooked rice (white or brown)
  • 1 (14.5 oz) can diced tomatoes, drained
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Optional: Italian seasoning, herbs of choice

Instructions

  1. Preheat the oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet over medium heat, sauté onion and garlic until fragrant. Add ground turkey or beef and cook until browned; drain excess fat.
  4. In a mixing bowl, combine the meat mixture with cooked rice, diced tomatoes, salt, pepper, and optional seasonings.
  5. Generously stuff each pepper with the filling mixture and place them upright in the prepared baking dish.
  6. Cover with aluminum foil and bake for about 30 minutes. Remove the foil, sprinkle cheese on top of each pepper, and bake uncovered for an additional 10 minutes until bubbly.
