  • 4 ounces shredded Gruyère cheese
  • 6 ounces shredded Havarti cheese
  • 1 ½ cups beef broth
  • 1 egg
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/3 cup almond meal for gluten-free version (or breadcrumbs if preferred)
  • 1/3 cup parsley, finely chopped
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme
  • 1 teaspoon onion powder

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine ground chicken, Parmesan cheese, almond meal (or breadcrumbs), parsley, chopped onion, egg, garlic, salt, and pepper until well mixed.
  3. Form mixture into meatballs and place on the baking sheet. Bake for 15-20 minutes until cooked through (internal temperature of 165°F).
  4. In a skillet over medium heat, melt butter with olive oil. Add sliced onions; cook until soft and golden (about 25 minutes).
  5. Stir in minced garlic and cook for an additional minute. Add beef broth along with thyme, onion powder, salt, and pepper; simmer until slightly thickened (about 5 minutes).
  6. Combine baked meatballs with the onion sauce; sprinkle cheeses on top. Cover until cheese melts (3-5 minutes). Serve warm.
