  • 2 cups fresh strawberries (chopped)
  • 1 tablespoon granulated sugar (for jam)
  • 1 can (14 oz) sweetened condensed milk
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 egg yolks
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • Additional strawberries (for garnish)

Instructions

  1. Prepare the tartlet shells by cutting and pressing Pâte Sucrée dough into tartlet pans. Freeze for 15 to 30 minutes before baking at 375°F until golden.
  2. Make the strawberry jam by cooking chopped strawberries with sugar until thickened. Allow cooling.
  3. For the pastry cream, simmer sweetened condensed milk, whole milk, and heavy cream. Temper egg yolks mixed with cornstarch, then combine and cook until thickened. Chill for two hours.
  4. Assemble the tartlets by spreading jam in each shell, piping pastry cream on top, and garnishing with fresh strawberries.
