  • 1 lb ground beef or ½ beef + ½ turkey
  • 1 large egg
  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 4 tbsp unsalted butter
  • 12 oz linguine
  • ¾ cup heavy cream
  • 2 tbsp chopped parsley
  • 3 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil (for searing)
  • 1 tbsp lemon juice

Instructions

  1. In a large bowl, mix ground beef (or turkey), egg, breadcrumbs, Parmesan cheese, parsley, minced garlic, salt, and pepper until just combined. Form into 1-inch meatballs.
  2. Heat olive oil in a skillet over medium heat and brown the meatballs on all sides for about 6–8 minutes. Remove from skillet.
  3. In the same skillet, lower the heat and add butter and garlic; sauté until fragrant. Stir in lemon juice and parsley before returning meatballs to the pan to simmer in the sauce for about 5–7 minutes.
  4. Cook linguine according to package instructions; reserve pasta water. In a saucepan, melt butter, add cream, and stir in Parmesan until melted. Toss cooked linguine with sauce.
  5. Serve meatballs over creamy linguine with extra garlic butter drizzled on top.
