- 1 large bulb of garlic
- 1.3kg baking potatoes
- 75g butter (30g melted)
- 2 tbsp double cream
- 60g freshly grated parmesan
- 4 large egg yolks
- Salt and pepper
- Olive oil (as needed)
Instructions
- Roast the garlic: Slice off the bulb tip, drizzle with olive oil, wrap in foil, and roast at 180C for 50-60 minutes until soft.
- Cook the potatoes: Peel and dice the potatoes, boil in salted water until fork-tender, then drain.
- Mash the mixture: Combine drained potatoes with melted butter, cream, roasted garlic, parmesan, salt, and pepper. Mix in egg yolks once cooled slightly.
- Pipe onto a baking tray using a piping bag fitted with a star tip.
- Bake at 200C for 15-20 minutes until golden brown on top.
