  • lbs sirloin steak, cut into bite-sized cubes
  • lbs baby potatoes, halved or quartered
  • 4 tablespoons olive oil
  • 4 tablespoons butter
  • 56 cloves garlic, minced
  • Salt, black pepper, paprika, and dried Italian herbs to taste
  • Fresh parsley for garnish

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the halved baby potatoes, season with salt, black pepper, and paprika, and cook until golden brown and fork-tender (about 15 minutes). Remove from skillet.
  2. Season the steak cubes with salt, black pepper, and Italian herbs. In the same skillet, add 1 tablespoon of olive oil and 2 tablespoons of butter. Sear the steak cubes for 2-3 minutes on each side until browned.
  3. Lower the heat and add the remaining butter along with minced garlic to sauté until fragrant (about 1 minute).
  4. Return the cooked potatoes to the skillet with steak and garlic butter sauce. Toss gently to combine and heat through for an additional minute or two. Garnish with fresh parsley before serving.
