  • 2 medium zucchinis, sliced
  • 1 cup uncooked quinoa
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • 1/2 cup sour cream or Greek yogurt
  • 1 tbsp Dijon mustard
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Optional: splash of lemon juice for sauce

Instructions

  1. Bring the steak to room temperature and rub with olive oil, salt, pepper, garlic powder, and smoked paprika.

  5. Grill steak for about 4–5 minutes per side for medium-rare doneness; let rest for 5–10 minutes.
  6. Cook quinoa according to package instructions.
  7. In a bowl, combine sour cream or yogurt with Dijon mustard, garlic powder, smoked paprika, salt, and optional lemon juice.
  8. Slice the rested steak against the grain.
