  • 1 yellow onion, diced
  • 1 taco seasoning packet (or 2 tbsp homemade)
  • 2 medium sweet potatoes, peeled and diced
  • 2 tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • Salt and pepper to taste
  • 1 avocado, sliced
  • 1 cup cottage cheese (low-fat or full-fat)
  • 2 tbsp hot honey (store-bought or homemade)

Instructions

  1. Preheat your oven to 400°F.
  2. Toss diced sweet potatoes with 1 tbsp olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Spread them on a baking sheet. Roast for 40-45 minutes, stirring halfway through until they are tender and slightly crispy.
  3. In a skillet over medium heat, add the remaining olive oil. Once heated, add the diced onion. Sauté until softened. Add in the ground beef. Season with taco mix and cook until browned and fully cooked through.
  4. In each bowl, layer roasted sweet potatoes as a base. Top with seasoned ground beef. Add sliced avocado and spoon cottage cheese on top. Finally, drizzle hot honey over everything for that perfect finish.
