  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 pound lean ground beef
  • 1 tablespoon olive oil
  • 28 ounces diced tomatoes, drained
  • 2 cups shredded mozzarella cheese
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Slice zucchini into 1/2-inch rounds and sprinkle with salt; let sit in a colander for 15 minutes to draw out moisture. Rinse and pat dry.
  3. In a skillet over medium-high heat, heat olive oil and sauté onions until softened. Add garlic and ground beef; cook until browned.
  4. Stir in drained tomatoes, Italian seasoning, salt, and pepper, then remove from heat.
  5. In an 8×8 baking dish, layer half of the beef mixture, half of the zucchini slices, and half of the cheese. Repeat layers.
  6. Bake for 20-25 minutes until cheese is melted and bubbly. Let rest for 10 minutes before serving.
