  • Salt and pepper to taste
  • 1 cup shredded mozzarella or cheddar cheese

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, heat the olive oil. Add the diced onion and sauté until softened (3–4 minutes).
  3. Add the ground turkey, breaking it apart as it cooks until browned (5–6 minutes). Drain excess fat if necessary.
  4. Stir in minced garlic, diced bell pepper, diced sweet potatoes, smoked paprika, ground cumin, salt, and pepper. Cook for an additional 3–5 minutes until fragrant.
  5. Transfer the mixture to the prepared baking dish. Cover with foil and bake for 25 minutes or until sweet potatoes are tender.
  6. Remove foil and sprinkle shredded cheese evenly on top. Bake for another 10–15 minutes until cheese is melted and bubbly.
