  • 1/4 cup cashew butter (or peanut butter)
  • 1/4 cup maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup chocolate chips
  • 1 cup chocolate chips (for the topping)
  • 1 tsp coconut oil (for melting)

Instructions

  1. In a mixing bowl, combine almond flour, cashew butter, maple syrup, melted coconut oil, vanilla extract, and salt. Mix until smooth.
  2. Stir in the chocolate chips until evenly distributed.
  3. Line a cutting board or large plate with parchment paper and transfer the mixture onto it. Use a spatula or your hands to flatten into an even layer about 1/2-inch thick.
  4. For the topping, melt the chocolate chips and coconut oil together in a microwave-safe bowl in 30-second intervals until smooth.
  5. Pour the melted chocolate over the cookie dough base and spread evenly. Optionally sprinkle flaky sea salt on top.
  6. Chill in the freezer for about 10 minutes to set before slicing into large pieces.
