  • 2/3 cup maple syrup or honey
  • 1/4 cup Greek yogurt (plain or vanilla)
  • 1/4 cup vegetable oil
  • 1 egg
  • 2 teaspoons vanilla essence
  • 1 2/3 cups whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together pumpkin puree, maple syrup or honey, Greek yogurt, vegetable oil, egg, and vanilla essence until smooth.
  3. In another bowl, mix whole wheat flour, cinnamon, nutmeg, baking soda, baking powder, and salt.
  4. Gradually combine dry ingredients with wet ingredients using a spatula; fold gently until just mixed.
  5. Spoon batter into a greased muffin tin, filling each cup about two-thirds full.
  6. Bake for 18 minutes or until a toothpick comes out clean.
