  • 1 tbsp butter
  • 1 leek (sliced)
  • 2 carrots (cut into large pieces)
  • 2 stalks celery (diced)
  • 2 cloves garlic (pressed)
  • 2 tbsp flour
  • 4 cups chicken stock
  • 2 cups cooked turkey or chicken (shredded)
  • 2 large potatoes (cut into large pieces)
  • 2 bay leaves
  • Fresh thyme or dried thyme
  • Fresh parsley (chopped)
  • Salt and pepper to taste

Instructions

  1. In a Dutch oven, melt butter over medium heat. Sauté sliced leeks, carrots, celery, and thyme until softened (about 5 minutes). Add garlic and cook for another minute.
  2. Stir in flour until combined, then gradually add chicken stock while scraping the pot bottom. Bring to a boil and season with salt and pepper.
  3. Add potatoes, cooked turkey, and bay leaves. Simmer uncovered in a preheated oven at 350°F for 45 minutes.
  4. If desired, stir in cream before serving and garnish with chopped parsley.
