- 1 leek (sliced)
- 2 carrots (cut into large pieces)
- 2 stalks celery (diced)
- 2 cloves garlic (pressed)
- 2 tbsp flour
- 4 cups chicken stock
- 2 cups cooked turkey or chicken (shredded)
- 2 large potatoes (cut into large pieces)
- 2 bay leaves
- Fresh thyme or dried thyme
- Fresh parsley (chopped)
- Salt and pepper to taste
Instructions
- In a Dutch oven, melt butter over medium heat. Sauté sliced leeks, carrots, celery, and thyme until softened (about 5 minutes). Add garlic and cook for another minute.
- Stir in flour until combined, then gradually add chicken stock while scraping the pot bottom. Bring to a boil and season with salt and pepper.
- Add potatoes, cooked turkey, and bay leaves. Simmer uncovered in a preheated oven at 350°F for 45 minutes.
- If desired, stir in cream before serving and garnish with chopped parsley.
