  • 4 bell peppers
  • 4 cups fresh spinach
  • 1 tub (15 oz) ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan
  • ½ cup chopped green onions
  • ½ cup chopped fresh basil
  • 1 handful chopped flat-leaf parsley
  • 1 tsp each dried rosemary, dried thyme, fennel seed, and salt
  • ½ tsp pepper
  • 2 large eggs
  • ½ cup breadcrumbs
  • 1 Tbsp olive oil
  • 1 Tbsp oil

Instructions

  1. Preheat your oven to 400°F (204°C). Halve the bell peppers lengthwise, remove seeds and ribs, then place them cut-side up on a parchment-lined baking sheet. Brush with olive oil.
  2. Bake for about 20 minutes until slightly softened. Drain any accumulated water and reduce oven temperature to 350°F (176°C).
  3. In a microwave-safe bowl, wilt the spinach (15-30 seconds). Chop it roughly and mix with remaining filling ingredients in a large bowl.
  4. Fill each pepper with the ricotta mixture evenly.
  5. Combine breadcrumbs with oil in a small bowl; sprinkle over stuffed peppers. Bake for another 30 minutes until golden brown.
