  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (optional)

Instructions

  1. Season chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat a skillet over medium heat and sear chicken for 3–4 minutes on each side until golden brown; set aside.
  3. In a bowl, mix BBQ sauce and honey together.
  4. Toast the uncooked rice in the same skillet for 1–2 minutes.
  5. Add chicken broth and half of the BBQ sauce mixture to the skillet; stir well.
  6. Return chicken to the skillet and pour remaining sauce over it; cover and simmer on low for about 15 minutes.
  7. If using mixed vegetables, add them now; cover and cook for an additional 5 minutes until rice is tender.
