  • 1/2 cup butter, softened

  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup peaches, finely diced (fresh or canned)
  • 1/2 cup milk
  • 8 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 3 cups powdered sugar, sifted
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons peach puree (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. Cream softened butter, sugar, and honey until fluffy. Then add eggs one at a time and vanilla extract.
  4. Alternate adding dry ingredients and milk to the butter mixture until combined.
  5. Gently fold in diced peaches.
  6. Fill each liner two-thirds full with batter and bake for 18-22 minutes or until a toothpick comes out clean.
  7. Allow cupcakes to cool completely before frosting.
