  • 2 large chicken breasts, cubed
  • 10 oz rigatoni pasta
  • 1/3 cup honey
  • 1 1/2 teaspoons freshly cracked black pepper
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 2 tablespoons soy sauce
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • Salt to taste
  • 2 tablespoons chopped green onions (for garnish)

Instructions

  1. Bring a pot of salted water to boil and cook rigatoni until al dente; drain and reserve 1/2 cup pasta water.
  2. Season cubed chicken with salt and pepper; heat olive oil in a skillet over medium-high heat and cook chicken until golden brown (about 5-7 minutes). Set aside.
  3. In the same skillet, add remaining olive oil and sauté sliced carrots for about 3 minutes; then add garlic and sauté for another minute.
  4. Lower heat, add butter, honey, soy sauce, and black pepper; simmer for 2-3 minutes until slightly thickened.
  5. Return chicken to skillet, combine with sauce, then mix in cooked rigatoni. If needed, use reserved pasta water to adjust sauce consistency.
  6. Garnish with green onions before serving.
