  • Lemon juice
  • Quinoa
  • Vegetable broth

  • Dark chocolate
  • Coconut cream
  • Agar-agar powder
  • Fresh berries

Instructions

  1. Gather all ingredients and wash/chop vegetables into bite-sized pieces. Season the chicken with salt, pepper, and olive oil.
  2. Preheat oven to 375°F (190°C). Sear seasoned chicken breasts in olive oil until golden brown (4-5 minutes per side). Transfer to a baking dish and add garlic, rosemary, and lemon juice. Bake for 20-25 minutes or until cooked through.
  3. Rinse quinoa under cold water; combine with vegetable broth in a pot, bring to boil, then simmer for 15 minutes until liquid is absorbed.
  4. Sauté mixed vegetables in olive oil over medium heat until tender (7-10 minutes); season with salt and pepper.
  5. Melt dark chocolate; whip coconut cream and mix with melted chocolate and agar-agar according to package instructions. Pour into ramekins and refrigerate until set.
