Ingredients

Scale
  • 1/2 cup softened butter

  • 1/4 cup granulated sugar
  • 1 tbsp vanilla extract
  • 1 egg (room temperature)
  • 1 & 1/4 cup old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1/4 tsp cinnamon
  • Pinch of nutmeg
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup powdered sugar
  • 1.5 tbsp milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and vanilla extract; mix well.
  3. In another bowl, combine flour, rolled oats, cinnamon, nutmeg, baking soda, and salt. Gradually add this dry mixture to the wet ingredients until fully incorporated.
  4. Scoop out equal portions of dough onto the prepared baking sheet and gently flatten each ball to about 1 inch thick.
  5. Bake for approximately 10 minutes or until soft but not overbaked. Allow cooling on the sheet for about 20 minutes before transferring to a cooling rack.
