  • 1 cup of roasted red peppers (chopped)
  • ½ cup of fresh parsley (chopped)
  • ¼ cup of apple vinegar
  • 5 garlic cloves (peeled)
  • ¼ cup of lemon juice
  • 2 teaspoons of smoked paprika
  • ½ teaspoon of Korean chili flakes (adjust for heat preference)
  • 8 tablespoons of butter (room temperature)
  • 1 teaspoon of garlic (very finely minced)
  • 2 teaspoons of fresh parsley (finely chopped)
  • ½ teaspoon of salt
  • ¼ teaspoon of black pepper
  • 1 tablespoon of balsamic vinegar
  • 1 tablespoon of brown sugar
  • Salt and pepper (to taste)

Instructions

  1. Prepare the chimichurri sauce by blending roasted red peppers, parsley, apple vinegar, garlic, lemon juice, smoked paprika, and Korean chili flakes together. Gradually mix in olive oil.
  2. In a skillet over medium heat, melt butter and caramelize sliced onions before adding balsamic vinegar and brown sugar.
  3. Mix softened butter with minced garlic and parsley to create garlic butter.
  4. Grill seasoned filet mignon steaks until medium-rare. Let rest before slicing thinly.
