  • 4 chicken breasts
  • 3 eggs
  • ½ cup all-purpose flour
  • 1½ cups Italian-style panko breadcrumbs
  • 2 cups cherry tomatoes
  • 1½ cups fresh basil leaves
  • 1 burrata cheese
  • 2 tbsp olive oil
  • 1 tsp lemon juice
  • 1 tsp lemon zest
  • ½ tsp kosher salt
  • 2 tbsp balsamic glaze

Instructions

  1. Pound the chicken breasts to an even thickness and season with salt and pepper.
  2. Set up a breading station with flour, beaten eggs, and panko breadcrumbs.
  3. Coat each chicken breast in flour, dip in egg, then coat with breadcrumbs.
  4. Heat oil in a cast iron skillet over medium heat and fry cutlets until golden brown (about 2-3 minutes per side).
  5. In the same skillet, sauté cherry tomatoes until blistered; add garlic, salt, vinegar, basil, lemon juice, and zest.
