			- 4 chicken breasts
 - 3 eggs
 - ½ cup all-purpose flour
 - 1½ cups Italian-style panko breadcrumbs
 - 2 cups cherry tomatoes
 - 1½ cups fresh basil leaves
 - 1 burrata cheese
 - 2 tbsp olive oil
 - 1 tsp lemon juice
 - 1 tsp lemon zest
 - ½ tsp kosher salt
 - 2 tbsp balsamic glaze
 
Instructions
- Pound the chicken breasts to an even thickness and season with salt and pepper.
 - Set up a breading station with flour, beaten eggs, and panko breadcrumbs.
 - Coat each chicken breast in flour, dip in egg, then coat with breadcrumbs.
 - Heat oil in a cast iron skillet over medium heat and fry cutlets until golden brown (about 2-3 minutes per side).
 - In the same skillet, sauté cherry tomatoes until blistered; add garlic, salt, vinegar, basil, lemon juice, and zest.
