Ingredients

  • 3 cups grated zucchini
  • 2 green onions or shallots
  • 2 eggs
  • 1 garlic clove
  • 1/2 cup feta cheese
  • 1 tablespoon dill
  • 1/2 cup wholemeal flour
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Grate the zucchini into a colander, sprinkle with salt, and let drain for 30 minutes. Squeeze out excess moisture.
  2. In a mixing bowl, combine the drained zucchini, eggs, green onions, garlic, dill, feta cheese, salt, pepper, flour, and baking powder. Mix until just combined.
  3. Heat olive oil in a frying pan over medium heat. Drop spoonfuls of the mixture into the pan and flatten slightly.
  4. Cook for 3-4 minutes on each side until golden brown and crispy. Transfer to paper towels to drain excess oil.
