  • 1/2 cup frozen raspberries (chopped)
  • 3 tablespoons granulated sugar (for lemon sugar coating)
  • 1 teaspoon lemon zest (for lemon sugar coating)
  • 1 cup confectioners' sugar (for raspberry glaze)
  • 12 frozen raspberries (for raspberry glaze)
  • 1 tablespoon plus 1 teaspoon water (for raspberry glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together gluten-free flour, baking powder, and salt.
  3. In another bowl, cream together the butter (or vegan alternative) and sugar until light and fluffy.
  4. Add cornstarch mixture, milk, lemon juice, and lemon zest to the butter-sugar mix; stir until combined.
  5. Gradually add dry ingredients to wet mixture; fold in chopped frozen raspberries gently.
  6. Form two-inch dough balls, roll in lemon sugar coating, and place on prepared baking sheet.
